This quick-to-fix vegetable soup is so good for you! Snappy Veggie Soup is perfect for when you want to sip something warm on a chilly night.

What You'll Need

  • 5 1/4 cup 98% fat-free chicken broth
  • 2 tablespoon chopped fresh parsley
  • 1 package (16-ounce) frozen vegetables for soup mix (tomatoes, potatoes, corn, carrots, butter beans, okra, green beans, onions, celery)

What to Do

  1. In a soup pot, bring broth to a boil.

  2. Stir in parsley and frozen vegetables. Reduce heat to low and simmer 15 to 20 minutes, or until flavors are well blended, stirring occasionally.
