Turkey Sausage Stuffing Muffins

What You'll Need

  • 1 tablespoon light margarine
  • 12 ounce lean turkey sausage
  • 1 cup finely diced onion
  • 1 cup finely diced celery
  • 8 slice whole wheat bread, cut into 1/2-inch cubes, toasted
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon poultry seasoning
  • 1/2 cup egg substitute
  • 1/2 cup low sodium fat-free chicken broth

What to Do

  1. Preheat oven to 350 degrees F. Coat a 12-cup muffin tin with cooking spray.
  2. In a large skillet over medium-high heat, melt margarine; add sausage, onion, and celery and cook 8 to 10 minutes, or until sausage is no longer pink and is beginning to brown, stirring occasionally. Place in a large bowl, add remaining ingredients, and toss until well mixed.
  3. Place about 1/3 cup of sausage mixture in each muffin cup, pressing down gently to pack together.
  4. Bake 20 to 25 minutes, or until lightly browned on top and heated through. Let cool 3 to 5 minutes, then remove from muffin tin and serve immediately.
