Autumn Squash

Serve Autumn Squash on a platter with your famous pot roast or whatever main attraction you have planned. It's a colorful, diabetic-friendly dish the whole family will love!

What You'll Need

  • 2 tablespoon olive oil
  • 2 zucchini, sliced
  • 2 yellow squash, sliced
  • 2 onions, sliced
  • 2 tomatoes, quartered
  • 2 garlic cloves, minced
  • 1/4 cup pitted green or black olives, sliced in half
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a large skillet or wok, combine all the ingredients.
     
  2. Cook over medium heat for 10 to 15 minutes, or until the zucchini and yellow squash are tender, stirring occasionally.
