Hearty Asian-style panko bread crumbs and flavorful Parmesan cheese are the tasty duo that coat our Breaded Eggplant Slices. This healthier version of the classic baked eggplant dish is sure to be one of your favorites.

What You'll Need

  • 1 1/4 pound eggplant with peel on, cut into 3/8-inch slices
  • 1/2 cup panko (Japanese-style) bread crumbs
  • 3 tablespoon grated Parmesan cheese
  • 2 egg whites, beaten

What to Do

  1. Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil; coat with cooking spray.
     
  2. In a shallow dish, combine bread crumbs and cheese. Dip eggplant slices in egg and coat with crumbs. Place on prepared baking sheet.
     
  3. Bake 20 to 25 minutes, or until eggplant is tender.
