Cauliflower-Cheddar Melt

There's no harm in disguising your veggies with some low-fat melted cheese. If that's what it takes to eat healthier, than go for it...and this lighter recipe for Cauliflower-Cheddar Melt is sure to win you over.

What You'll Need

  • 2 pound cauliflower
  • 2 tablespoon water
  • 3/4 cup reduced-fat shredded Cheddar cheese
  • Paprika for garnish

What to Do

  1. Trim leaves, cut off stem, and leave cauliflower whole. 

  2. In a microwaveable 2-quart dish, add water and cauliflower. Cover and microwave on HIGH about 9 minutes, turning dish once. Cauliflower should be just tender.

  3. Drain cauliflower, sprinkle with cheese, and let stand until cheese melts. Sprinkle with paprika and serve.
