What You'll Need:
2 teaspoons canola oil
4 (4-ounce) boneless, skinless chicken breast halves
pound fresh mushrooms, sliced
1 medium green bell pepper, chopped
small onion, minced
1 (10-3/4-ounce) can condensed reduced-fat cream of mushroom soup
teaspoon garlic powder
teaspoon black pepper
What To Do:
- In a large skillet heat oil over medium heat.
- Add the chicken, mushrooms, pepper, and onion to the skillet; cook the chicken for 5 minutes per side while sautéing the vegetables.
- Add the remaining ingredients; reduce the heat to medium-low, cover, and cook 10 minutes, or until no pink remains in the chicken. Serve the chicken topped with the sauce.
