Nutty Brown Rice

No nuts here? . . . it tastes like it 'cause brown rice gives us naturally nutty flavor plus lots of vitamins!
What You'll Need
- 1 tablespoon sunflower or vegetable oil
- 1 small onion, chopped
- 1 can (10 ounces) condensed chicken broth
- 3/4 cup water
- 1 cup uncooked brown rice (not instant rice)
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 can (16 ounces) Great Northern beans, rinsed and drained
- 4 plum tomatoes, chopped, seeds and juices squeezed out
What to Do
- In a large skillet, heat the oil over medium heat; add the onion and sauté for 2 to 3 minutes, or until tender. Add the broth, water, rice, cumin, and pepper; mix well. Bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until all the liquid is absorbed. With a spoon, gently stir in the beans and tomatoes; cook for 5 minutes, or until heated through.
