Nutty Brown Rice

No nuts here? . . . it tastes like it 'cause brown rice gives us naturally nutty flavor plus lots of vitamins!

What You'll Need

  • 1 tablespoon sunflower or vegetable oil
  • 1 small onion, chopped
  • 1 can (10 ounces) condensed chicken broth
  • 3/4 cup water
  • 1 cup uncooked brown rice (not instant rice)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 can (16 ounces) Great Northern beans, rinsed and drained
  • 4 plum tomatoes, chopped, seeds and juices squeezed out

What to Do

  1. In a large skillet, heat the oil over medium heat; add the onion and sauté for 2 to 3 minutes, or until tender. Add the broth, water, rice, cumin, and pepper; mix well. Bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until all the liquid is absorbed. With a spoon, gently stir in the beans and tomatoes; cook for 5 minutes, or until heated through.
