Jiffy Shrimp with Spinach

Around the Mr. Food Test Kitchen, we always like to say that "shrimp is fast food." Well, since it cooks up so quickly, and it's a healthy option for a diabetes recipe collection, we know you'll want to try our Jiffy Shrimp with Spinach as soon as you can!

What You'll Need

  • 2 (10-ounce) bags washed fresh spinach
  • 1 tablespoon cornstarch
  • 2 pounds frozen cooked medium shrimp, peeled, deveined, thawed, drained
  • 1/2 teaspoon lemon pepper seasoning

What to Do

  1. Coat a medium nonstick skillet with cooking spray. Over medium heat, cook spinach 3 to 5 minutes, or until limp. Add a small amount of water if needed.

  2. Mix cornstarch with 1 tablespoon water and stir to dissolve. Add cornstarch to spinach, bring to a boil, and stir until thickened.

  3. Reduce heat to low, add shrimp, and sprinkle with seasoning. Cook just until heated through.
