Jiffy Shrimp with Spinach

What You'll Need
- 2 (10-ounce) bags washed fresh spinach
- 1 tablespoon cornstarch
- 2 pounds frozen cooked medium shrimp, peeled, deveined, thawed, drained
- 1/2 teaspoon lemon pepper seasoning
What to Do
- Coat a medium nonstick skillet with cooking spray. Over medium heat, cook spinach 3 to 5 minutes, or until limp. Add a small amount of water if needed.
- Mix cornstarch with 1 tablespoon water and stir to dissolve. Add cornstarch to spinach, bring to a boil, and stir until thickened.
- Reduce heat to low, add shrimp, and sprinkle with seasoning. Cook just until heated through.
