Quick-cooking shrimp is not only a joy to make last minute, but it's fancy enough for company, and easy enough for anytime. Our diabetes-friendly recipe for Lemon-Pepper Florentine Shrimp will make mealtime special every time you serve it.
What You'll Need
- 2 (10-ounce) bags fresh spinach
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 pounds frozen cooked, peeled, and deveined shrimp
- Lemon-pepper seasoning, to taste
What to Do
- Coat a large skillet with cooking spray. Cook spinach over medium heat 3 to 5 minutes, or until wilted.
- In a small bowl, mix cornstarch with water and stir until it dissolves. Add cornstarch mixture to skillet, bring to boil, and stir until it thickens.
- Add shrimp and lemon-pepper seasoning to taste. Reduce heat to low and cook until shrimp is heated through.
