Go ahead and go coconuts over this yummy Easy Coconut Pudding! You ought to, 'cause everything about it fits with a healthy eating lifestyle! Hooray!

What You'll Need:
  • 2 cups fat-free milk
  • 1 package (4-serving-size) instant sugar-free vanilla pudding mix
  • 1/4 teaspoon coconut or vanilla extract
  • 2 tablespoons shredded coconut, toasted
What To Do:
  1. In a blender, combine milk, pudding mix, and coconut extract for about 1 minute or until slightly thickened.
     
  2. Divide among 4 dessert dishes and sprinkle with coconut.
     
  3. Refrigerate 30 minutes or until set.
