What You'll Need

  • 1 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 (15-ounce) can pure pumpkin
  • 2 eggs
  • 1/2 cup reduced fat milk
  • 2 tablespoons margarine, melted

What to Do

  1. Preheat oven to 350 degrees F. Coat rimmed baking sheets with cooking spray.
  2. In a large bowl, whisk flour, baking powder, chili powder, onion powder, cayenne pepper, and salt.
  3. In a medium bowl, whisk pumpkin, eggs, milk, and margarine. Add to dry mixture and stir just until combined. Drop batter by tablespoonfuls onto baking sheet.
  4. Bake 15 minutes, or until golden brown on bottom. Serve warm.
