This spice cake isn't just your normal spice cake; our Apple-Harvest Spice Cake takes the apple spice cake you know and love to a whole new level! With this diabetic-friendly recipe, you end up with a moist and flavorful apple cake that you're going to love! The little chunks of apple give it that little extra something, to make this a harvest time treat you'll crave all year long. 

What You'll Need

  • 1 1/2 cup white whole-wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 egg, lightly beaten
  • 3/4 cup low-fat plain yogurt
  • 1/3 cup brown sugar blend
  • 1/4 cup unsweetened applesauce
  • 3 tablespoon canola oil
  • 1 large apple, peeled and finely chopped

What to Do

  1. Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking dish with cooking spray. 
  2. In a large bowl, combine flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt; mix well. 
  3. In a medium bowl, combine egg, yogurt, brown sugar blend, applesauce, and oil; mix well. 
  4. Add egg mixture to flour mixture; stir until just combined. Fold in apple. Spread batter evenly in prepared baking dish. 
  5. Bake 25 to 30 minutes or until a toothbpick inserted in center comes out clean. Serve warm or let cool, then serve.
