Mini Ginger Shortcakes

Ginger is a classic flavor this time of year, and that's why we want to celebrate it with this easy dessert recipe. The delicious flavor, and our festive pear garnish, will make everyone think you worked for hours, but you'll know being the hostess-with-the-mostess this year was a cinch! 

What You'll Need

  • 1 cup all purpose flour
  • 2 tablespoon brown sugar blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 2 tablespoon margarine
  • 1/2 cup buttermillk
  • 1 cup frozen sugar free whipped topping, thawed
  • 1/2 cup low fat, vanilla Greek yogurt
  • 1/4 teaspoon ground nutmeg
  • 1 fresh pear, cut into thin slices

What to Do

To Make Shortcake:

  1. Preheat oven to 425 degrees F. Coat 2 baking sheets with cooking spray.
  2. In a medium bowl, combine flour, brown sugar blend, baking powder, ginger, and baking soda; mix well. Using a pastry blender, or fork, cut in margarine until mixture resembles coarse crumbs. Add buttermilk, stirring just until moist. 
  3. Drop dough by tablespoonfuls into 12 mounds on baking sheet. Bake 10 to 12 minutes, or until golden. Let cool on wire rack. 

To Make Filling:

  1. Meanwhile, in a medium bowl, mix whipped topping, yogurt, and nutemg until combined.

To Finish:

  1. Split biscuits in half. Spoon mixture evenly onto bottom half, and replace biscuit top. Garnish with pear slices and serve.
