When the holidays come it can be difficult to find recipes that are diabetes-friendly, but give you the same great flavors of the season. Well, we've got a Gingerbread Cookies recipe that's diabetes-friendly, and packed full of cheer! So gather 'round the fire with friends and family, grab a gingerbread cookie, and celebrate in flavorful style! 

What You'll Need

  • 1 stick (1/2 cup) margarine, softened
  • 2 tablespoon brown sugar blend
  • 1/4 cup molasses
  • 1 egg
  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sugar-free vanilla frosting

What to Do

  1. In a medium bowl, beat together margarine, brown sugar blend, molasses, and egg until creamy.
  2. In another medium bowl, combine flour, baking soda, ginger, and cinnamon. Gradually add to margarine mixture; mix until smooth. Refrigerate dough for 1 hour or overnight.
  3. Preheat oven to 375 degrees F. Coat baking sheets with nonstick cooking spray. Roll out dough onto a lightly floured surface to 1/4-inch thickness. Using a 3-inch gingerbread man cookie cutter, cut dough and place on baking sheets.
  4. Bake 7 to 8 minutes or until golden around edges. Remove to a wire rack to cool completely.
  5. Decorate cookies with frosting and serve or store in airtight container.
