Cozy up to a bowl of creamy chicken chowder loaded with lots of veggies! Our Country Kitchen Chowder is a slow cooker sensation, which means that it's super simple to throw-together and it's packed with flavor. This one is especially great when you need some extra comfort!

What You'll Need

  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch chunks
  • 1/2 cup chopped onion
  • 2 rib celery, diced
  • 4 clove garlic, minced
  • 8 ounce fresh mushrooms, sliced
  • 4 cup low-sodium chicken broth
  • 4 ounce reduced-fat cream cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 cup fat-free half-and-half
  • 4 slice low-sodium bacon, cooked crisp and crumbled

What to Do

  1. In a 4-quart or larger slow cooker, combine chicken, onion, celery, garlic, mushrooms, chicken broth, cream cheese, garlic powder, thyme, and pepper. Heat on HIGH 3-1/2 hours, then stir until cream cheese is melted. 
  2. Stir in half-and-half and bacon, and continue to cook for 30 minutes or until heated through.
