Low in fat and high in nutrition, lentils are always a super choice for anyone who has diabetes. Our Hearty Lentil Soup is so filling, you can enjoy it as a main dish soup or certainly have a cup as a starter for the rest of your meal.

What You'll Need

  • 1 cup finely chopped onion
  • 1 cup chopped red or green bell pepper
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup dried brown lentils, rinsed, drained
  • 1 teaspoon dried oregano
  • 3 cup water
  • 3 cup low sodium beef broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

What to Do

  1. Coat a large soup pot with cooking spray. Over medium heat, cook onion, bell pepper, celery, and carrots until tender, about 6 to 8 minutes, stirring occasionally.
     
  2. Add the remaining ingredients, mix well, and bring to a boil over high heat. Reduce heat to low, cover, and simmer 50 to 60 minutes, or until lentils are tender, stirring occasionally.
