  • 1 cup cauliflower rice
  • 1/4 cup finely chopped onion
  • 1/2 cup liquid egg substitute
  • 1/4 cup whole-wheat flour
  • 1/4 cup shredded part-skim mozzarella cheese
  • 2 tablespoon grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/4 teaspoon baking powder
  • 1 tablespoon turkey bacon bits

What to Do

  1. In a large bowl, combine cauliflower, onion, egg substitute, flour, mozzarella cheese, Parmesan cheese, garlic powder, and baking powder; mix well. Stir in bacon bits.
  2. Heat a waffle maker and once hot, coat with cooking spray. Divide the batter evenly (about 3/4 cup each) in two sections of the waffle maker (see Tip). Close and cook 5 minutes or until golden and crispy. Remove waffles with a fork and serve immediately
