Cookies for breakfast? Yep, it's totally okay when you're having one of our Best Breakfast Cookies. These easy baked cookies are made with some healthy ingredients that are nutritious and full of satisfying sweetness.

What You'll Need

  • 2 ripe bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cup old-fashioned oats
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • 2 tablespoons chopped walnuts

What to Do

  1. Preheat oven to 350 degrees F. Coat a baking sheet with cooking spray.
  2. In a large bowl, combine bananas, applesauce, oats, sugar, and vanilla; mix well. Stir in blueberries and walnuts.
  3. Drop by heaping tablespoons onto baking sheet. Bake for 20-22 minutes, or until light golden-brown around edges. Let cool 5 minutes, then remove to a wire rack to finish cooling.

Notes

Feel free to substitute the fresh blueberries for any other berries or chopped fruit you prefer!
