If all veggie recipes were as good as this zucchini side dish, everyone would want to eat them. No, seriously. Combining garlic and Parmesan makes a utopia of flavors for your taste buds. Between the crunch and the explosion of flavor, these Garlic Parmesan Zucchini Fries are a must have. So the next time you need a zucchini fix, whip up a batch of these for a taste that is absolutely addictive.

What You'll Need

  • 2 large zucchini
  • 1 tablespoon canola oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

What to Do

  1. Preheat oven to 450 degrees. Coat a rimmed baking sheet with cooking spray. 
  2. Cut each zucchini in half crosswise, then cut each half lengthwise into 3 wedges. 
  3. In a medium bowl, combine oil, lemon juice, garlic powder, salt, and pepper; mix well. Add zucchini and toss until evenly coated. Add Parmesan cheese and toss until evenly coated. Place zucchini in a single layer on baking sheet.
  4. Bake 15 to 20 minutes or until tender and crispy. Serve immediately.
