Make it a point to stock up on those budget-friendly packages of Asian-style ramen noodles, and keep this tasty and easy diabetic friendly recipe for Beef with Noodles in mind. It's an easy one-skillet supper that'll have the whole gang full!

What You'll Need

  • 1 (3-ounce) package ramen noodles, seasoning packet discarded
  • 1 pound 90% lean ground beef
  • 1 green bell pepper, chopped
  • 1/2 cup onion, chopped
  • 1 can (14.5-ounce) diced tomatoes with roasted garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Cook noodles according to package directions; rinse and drain.
  2. In a medium nonstick skillet over medium-high heat, brown ground beef. Remove beef and drain.
  3. In same skillet, over medium heat, cook bell pepper and onions 5 to 6 minutes or until tender, stirring occasionally. Add tomatoes, beef, Italian seasoning, garlic powder, salt, and pepper. Cook 5 to 7 minutes, or until heated through, stirring occasionally.
  4. Stir in noodles, and cook for 1 to 2 minutes. Serve.

I just made this and it is so good! Not bland and not salty. I did add some sliced black olives that I needed to use up and they were tasty as well. Perfect easy recipe that will be made again again!

I have made something like this for years. It is more of a stir fry. 1 pk of ramen per person...either beef or chicken 1 lb hamburger or cooked, cubed chicken 2 packages frozen stir fry veggies just cook your hamburger or heat up your chicken...cook the noodles and the frozen veg as directed...drain them...mix everything together with the seasoning packets and add a bit of soy sauce if you want. Fast, tasty and FULL of veggies.

This looks like an easy but tasty meal. Some days you just need an easy hot homemade meal and this could be one of them. I'm glad that the seasoning packet was discarded. I think you could use thin spaghetti instead, too, if you don't have ramen.

It is good but be prepared to add more liquid to it, as it cooks it gets drier. And more seasoning could be used also.
