We use fresh blueberries to make our Rustic Blueberry Pie, just like they would in the countryside. This blueberry pie recipe may be simple, but it's nothing short of delicious. It's the perfect pie to share with family and friends.

What You'll Need

  • 1 refrigerated pie crust (from a 14.1-ounce package)
  • 2 cups fresh blueberries
  • 1 tablespoon plus 1 teaspoon sugar, divided
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1/2 tablespoon margarine, cut into pieces
  • 1 teaspoon water

What to Do

  1. Preheat oven to 425 degrees F. Unroll pie crust and place on a baking sheet.
  2. In a medium bowl, combine blueberries, 1 tablespoon sugar, the cornstarch, vanilla, and lemon zest; toss until blueberries are evenly coated. Spoon mixture onto pie crust, leaving a 2-inch border. Fold edges of crust toward center, overlapping slightly and covering about 1 inch of mixture. Place margarine over blueberries. Brush crust with water and sprinkle with remaining 1 teaspoon sugar.
  3. Bake 20 to 25 minutes, or until crust is golden brown. Let cool before slicing and serving.

When your guests see this pie, they will think that you really put your pastry skills to the test - it looks like a fancy French galette and only you will know that the pie dough is already done for you! I like to put a sheet of parchment paper underneath it in case some of the blueberry goodness leaks out, and it also makes it easier to transfer to a serving platter.
