Saucy Apricot Pork Chops

Sure, pork chops are an easy weeknight favorite, but by adding a little something extra to them, a good pork chop recipe can become oh-my-gosh special! Our Saucy Apricot Pork Chops extra special thanks to the addition of apricot preserves and a few sliced almonds. Serve it up with a couple of favorite sides and the whole family will ask for this again and again.
What You'll Need
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 4 (4-ounce) boneless pork chops, trimmed
- 1/4 cup sugar-free apricot preserves
- 1/2 (red or green) bell pepper, thinly sliced
- 1 tablespoon sliced almonds
What to Do
- In a small bowl, combine onion powder, garlic powder, and pepper; mix well.
- Coat a large skillet with cooking spray. Sprinkle pork chops evenly with seasoning mixture.
- Over medium heat, cook pork chops 3 to 4 minutes or until browned on both sides. Add apricot preserves and bell peppers to skillet; reduce heat to low. Cook 10 minutes or until pork is no longer pink, turning once through cooking.
- Spoon sauce over pork chops and sprinkle with almonds. Serve immediately.
