Maple-Glazed Acorn Squash

We've come up with an acorn squash recipe that's going to make the perfect side dish to your fall favorites! Drizzled with cinnamon and ooey gooey maple syrup, it's a sweet, satisfying recipe that's made for a diabetes-diet! Don't worry though. You can serve this up for family and friends, and they'll never know it's a healthier side dish option. 

What You'll Need

  • 1 acorn squash (1 pound), cut in half lengthwise and seeded
  • 1 tablespoon butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 2 tablespoon sugar-free maple syrup

What to Do

  1. Preheat oven to 400 degrees F. Place squash halves cut-side up on a rimmed baking sheet.
  2. In a small bowl, combine remaining ingredients; mix well. Spoon mixture evenly into squash halves.
  3. Bake 55 to 60 minutes or until tender. Cut each squash half lengthwise into halves, and serve.
