Our Beefed-Up Vegetable Stew is a super choice for anyone following a diabetic diet. That's cause we start with lean ground beef and pack it with lots of healthy veggies. After its simmered in the slow cooker for a while, it's absolutely perfect!
What You'll Need
- 1 pound 90% lean ground beef
 - 1 (14-ounce) can diced tomatoes with basil, garlic, and oregano (no salt added)
 - 1 (16-ounce) package frozen stew vegetables
 - 1 cup water
 - 1 cube reduced-sodium beef bouillon
 - 1/2 teaspoon garlic powder
 - 1/2 teaspoon onion powder
 - 1/4 teaspoon black pepper
 
What to Do
- Coat a medium nonstick skillet with cooking spray. Over medium heat, brown beef; drain.
 - Coat a 4- to 5-quart slow cooker with cooking spray. Add beef, tomatoes, stew vegetables, water, bouillon, garlic powder, onion powder, and black pepper. Stir, cover, and cook on LOW 4 to 6 hours.
