What You'll Need

  • 2 tablespoon margarine
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup finely chopped onion
  • 1 cup fresh spinach
  • 1 cup liquid egg substitute
  • 2 tablespoon fat-free milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

What to Do

  1. In a large skillet over medium heat, melt margarine. Add mushroom and onion and cook 3 minutes or until tender, stirring occasionally. Stir in spinach and heat for 1 minute or until spinach is wilted. Remove veggies from skillet and set aside.
  2. In a medium bowl, combine egg substitute, milk, garlic powder, and pepper; mix well. Coat skillet with cooking spray and place over medium heat. Add egg mixture to skillet and stir gently for 1 minute; allow egg to set up for 1 to 2 minutes.
  3. Top eggs with veggie mixture. Carefully fold omelet in half and slide onto platter. Cut in half and serve immediately.
