Shredded pork tacos are all the rage! Now, you can bring a taste of the tropics to your next outdoor shindig! Our Hawaiian Shredded Pork Tacos are a slow-cooker recipe made for a busy lifestyle. Make them ahead of time and serve it up when everyone shows up! The perfect combination of savory and sweet, everyone will be saying, "mahalo!" (That's thank you in Hawaiian!)

What You'll Need

  • 1 (3-pound) lean boneless pork shoulder or boneless pork butt
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 onion, sliced
  • 2 clove garlic, minced
  • 1 cup pineapple juice
  • 14 Bibb lettuce leaves (1 head)
  • 1 cup shredded carrot
  • 1/3 cup sliced scallions

What to Do

  1. Place pork in a 5 quart or larger slow cooker and sprinkle with cumin, ginger, and pepper. Top meat with onion and garlic. Pour pineapple juice over meat. 
  2. Cover and cook on high heat 5 to 5-1/2 hours or until pork shreds easily with a fork. Remove pork to a cutting board and shred with two forks. Place 1/4 cup of pork into a lettuce leaf, then top with carrots and scallion.
