Beefy Squash Bake

This ain't your momma's butternut squash recipe! Our Beefy Squash Bake is a hearty meal that's perfect for fall, or anytime you just want that yummy squash taste! The butternut squash is a great alternative to carb heavy potatoes! Plus, it's a great tasting way to mix it up, instead of serving up the same old bake. Whether you put this on the dinner table, or bring it to a potluck, we know this recipe will steal the show!

What You'll Need

  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 2 cup (1/2-inch chunks) butternut squash
  • 1/2 cup chopped red bell pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup reduced sodium beef broth
  • 4 ounce reduced fat cream cheese
  • 1/2 cup yellow cornmeal
  • 1/3 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 cup fat free milk
  • 1 tablespoon canola oil
  • 1 egg

What to Do

  1. Preheat oven to 400 degrees F. Coat a large skillet with cooking spray.
  2. Over medium heat, cook beef, onion, squash, and bell pepper 6 to 8 minutes or until browned; drain liquid. Stir in cumin, ginger, cinnamon, garlic powder, and black pepper; mix well. Add broth and cream cheese and heat until cheese is melted.  Spoon mixture into a 1-1/2 quart baking dish; set aside. 
  3. In a medium bowl, whisk corn meal, flour, sugar, and baking powder. In a small bowl, whisk milk, oil, and egg. Stir milk mixture into dry ingredients until thoroughly combined. Pour batter over beef mixture.
  4. Bake 20 to 25 minutes or until heated through and crust is set.
