Harvest Squash Soup

Stop looking through all those other butternut squash soup recipes! We've got the best one to bring the flavors of fall to your kitchen! Our Harvest Squash Soup will keep you warm against the chill in the air, and give you that cozy feeling everyone loves when autumn is in full swing!

What You'll Need

3 tablespoons light margarine
1/2 cup chopped onion
2 sprigs thyme, leaves removed from stem
1 medium butternut squash (about 2 pounds), peeled and cut into 1-inch pieces
1 teaspoon sugar
1/2 teaspoon salt
4 cups water
2 tablespoons milk

What to Do

In a large saucepan, over medium heat, melt margarine. Add onion and thyme and cook 5 minutes or until onion is tender, stirring occasionally.
Add squash, sugar, and salt and cook 3 minutes. Add water and bring to a boil. Reduce heat to low and simmer, uncovered, 15 to 20 minutes or until squash is tender.
Working in batches, transfer soup to a blender and puree until smooth; return to the saucepan. Stir in milk and heat on low 3 to 5 minutes or until heated through.
