Cheeseburger Salad

We've got one of the best salad recipes around. No, seriously. Sometimes, the same old thing can become, well a bit boring. So we decided to add some fun and flavor and create this delicious Cheeseburger Salad. It's made with all the fixings of your favorite cheeseburger, like beef, cheese, and tomatoes, but no buns are required. Of course, we made it diabetes-friendly, so that it fits in with your lifestyle--and you don't have to worry about any of that pesky guilt. 

What You'll Need

  • 1 pound ground turkey breast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 head romaine lettuce, chopped
  • 1 cup chopped tomato
  • 1/2 cup chopped red onion
  • 1/2 cup shredded reduced-fat shredded cheddar cheese
  • 1/2 cup low fat Thousand Island dressing

What to Do

  1. Coat a large skillet with cooking spray and over medium heat, sauté turkey, garlic powder, onion powder, mustard, paprika, and pepper 5 to 7 minutes or until no longer pink; set aside. (Make sure you break up the turkey as it cooks so you end up with crumbles.)
  2. On a large platter place lettuce, tomato, onion, and cheese. Top with crumbled turkey. Drizzle with dressing and serve.
