Mediterranean Grilled Lamb Chops

What You'll Need
- 1 (1-pound) eggplant, peeled and sliced into 1/4-inch slices
- 1 red onion, sliced into 1/4-inch slices
- Cooking spray
- 1 tablespoon olive oil
- 3 tablespoons lemon juice
- 2 tablespoons chopped fresh mint
cup chopped fresh parsley
- 1 teaspoon salt
teaspoon cayenne pepper
teaspoon black pepper
- 1 1/2
pound loin lamb chops, (about 8) well-trimmed
What to Do
Preheat grill to medium-high.
Coat both sides of eggplant and onion slices with cooking spray. Grill vegetables 2 to 3 minutes, turning once, until browned on both sides. Transfer to a cutting board and let cool slightly. Chop and combine in a medium bowl with oil, lemon juice, mint, parsley, 1/2 teaspoon salt, and cayenne. Set aside.
Meanwhile, sprinkle lamb with black pepper and the reamining salt. Grill chops about 4 minutes per side, or until browned on both sides and cooked to desired doneness. Serve with eggplant salad.
