One-Pot Saucy Shells

Zucchini, green bell pepper, tomatoes and mushrooms add color and health to this pasta dish. Plus, it's so easy it can be made in one pot!
What You'll Need
- 12 ounces pasta shells
- 1 pound lean ground turkey breast
- 1 jar (26 ounces) spaghetti sauce
- 1 onion, chopped
- 2 carrots, thinly sliced
- 1 large zucchini, cut into -inch chunks
- 1 large green bell pepper, chopped
- 3 Roma tomatoes, diced
- 1/2 pound sliced mushrooms
- 1 teaspoon Italian seasoning
What to Do

Cook the pasta according to the package directions, omitting the salt; drain and set aside.

Meanwhile, in the same soup pot, brown the turkey over high heat, stirring constantly. Add the remaining ingredients and reduce the heat to medium-low; cover and cook for 20 to 30 minutes, or until the vegetables are tender, stirring occasionally.
- Add the pasta to the pot; mix well and cook until heated through. Serve immediately.
