Going to a big potluck, or just want to make enough salad for the whole gang? Then, you'll love our recipe for Asian Cabbage Salad! This easy cabbage salad is low carb and low fat, too, which means you can enjoy another helping without the guilt!

What You'll Need

  • 1 (16-ounce) package coleslaw mix
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, diced
  • 2 scallions, thinly sliced
  • 1/4 cup unsalted dry roasted peanuts, chopped

What to Do

  1. In a large bowl, combine all ingredients. Toss to mix well.
