Chopped Veggie Salad

Plenty of fresh vegetables make this Chopped Veggie Salad a go-to when you're craving something light and fresh. A sprinkle of bacon bits and Parmesan cheese take it over the edge!

What You'll Need

  • 2 cups chopped fresh broccoli
  • 2 cups chopped fresh cauliflower
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 2 cups chopped tomatoes
  • 1 1/2 cup chopped fresh mushrooms
  • 1/2 cup chopped red onion
  • 1 cup fat-free Italian dressing
  • 1/4 cup bacon bits
  • 2 tablespoons grated fat-free Parmesan cheese

What to Do

  1. In a large bowl, combine broccoli, cauliflower, carrot, celery, green pepper, tomatoes, mushrooms, and onion. Add remaining ingredients and toss until evenly coated.
  2. Cover and refrigerate 1 hour, or until ready to serve. Toss again just before serving.

I read almost every one and have made many.I like the diabetic recipes.(recently diagnosed.KEEP UP the good work!!

Nobody ever reads these recipes but me it would seem. There are never any other comments. All these recipes are delicious and they ALL have the nutritional information that everyone seems to want so badly on the main Mr. Food web site.
