Mini Tiramisu Cups

Tiramisu is one of our favorite desserts, but often not the best choice for our diabetes diet. By creating a mini version of this classic Italian treat, you can indulge without having to worry! Not to mention, our Mini Tiramisu Cups are perfectly portable!

What You'll Need

  • 1 (12-ounce) container reduced-fat whipped cream cheese
  • 1/4 cup strong brewed coffee, cold
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons Splenda
  • 1 cup frozen, sugar-free whipped topping, thawed
  • 30 frozen mini phyllo tart shells
  • cocoa powder for sprinkling

What to Do

  1. In a bowl, combine cream cheese, coffee, vanilla, and Splenda; mix until smooth. Cover and chill 2 hours.
  2. Remove from refrigerator and fold in whipped topping.
  3. Place cream cheese mixture into a large resealable plastic bag and seal. Snip one corner off the bag and fill tart shells evenly. Sprinkle with cocoa powder. Serve or refrigerate until ready to use.

How to you bake the tart shells or do you serve them frozen?

Hi there! You do not need to bake the mini phyllo tart shells before serving; they will defrost on their own as you prepare the batter. If you would like, you can bake them in the oven for 3-4 minutes for a crispier crust. Enjoy!
