A trio of colorful chopped bell peppers adds just the right texture to this ranch-style Creamy Bell Pepper Dip, that yes...is perfect for a healthy diabetes diet.

What You'll Need

  • 1 cup reduced-fat cottage cheese, drained
  • 1 cup reduced-fat mayonnaise
  • 1 (1-ounce) package dry ranch-style dressing mix
  • 1/4 cup finely chopped green bell peppers
  • 1/4 cup finely chopped red bell peppers
  • 1/4 cup finely chopped yellow bell peppers

What to Do

  1. Combine all ingredients in blender or food processor. Blend until smooth. Refrigerate until ready to serve.
