You're going to love the contrast of the creamy pudding, crunchy macadamia nuts and refreshing mandarin oranges in our Hawaiian-Style Pudding! Is it light enough for a healthy diet? You bet it is!
What You'll Need
- 6 sugar-free vanilla pudding snack cups
- 1/4 teaspoon orange or almond extract
- 1 (11-ounce) can mandarin oranges, drained
- 2 tablespoons chopped roasted macadamia nuts
What to Do
- Empty pudding cups into medium bowl. Stir in extract and fold in mandarin oranges.
- Spoon 1/2 cup pudding into 6 dessert dishes and garnish with macadamias.

Excluding chocolate, this is my favorite sweet tooth fixer! I did substitute pineapple chunks in it's own juice because the mandarin oranges were still too much sugar for the diabetics in my family.
