Japanese Ginger Dressing

If you've ever tasted the creamy salad dressing served in Japanese restaurants, you've probably wondered just what was in it. Well, here's the answer! Now you can make it at home without any fuss.
What You'll Need
- 1/2 cup peanut oil
- 1/4 cup white vinegar
- 1/4 cup water
- 2 tablespoons soy sauce
- 2 teaspoons lemon juice
- 2 tablespoons ketchup
- 2 teaspoons ground ginger
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped onion
What to Do
- Combine all ingredients in a blender jar or food processor and blend until smooth. Serve immediately, or cover and chill until ready to serve.
Makes 1-1/2 cups dressing.
Note
Just before serving, toss with coarsely shredded iceberg lettuce and diced tomatoes.
