What You'll Need

  • 1 medium onion, sliced
  • 1/4 pound fresh snow peas
  • 1/2 large red bell pepper, cut into strips
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 pound sea scallops
  • 3 cups thinly sliced bok choy
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup low-sodium chicken broth*
  • 1/4 cup rice wine vinegar
  • 3 teaspoons light soy sauce*
  • 2 tablespoons cornstarch
  • 1/4 cup water

  2. Add the scallops, bok choy, and mushrooms; stir-fry for 3 to 4 minutes.
