We've got a tasty way to change up your dinner routine and it's one that'll have you dreaming of the tropics. Our Slow Cooker Polynesian Chicken features a homemade pineapple-honey sauce that's gets cooked along with chicken, pineapple chunks, and colorful bell peppers. Every bite is packed with flavor!

What You'll Need

  • 1 (20-ounce) can pineapple chunks in juice, drained, with juice reserved
  • 1/3 cup honey
  • 3 tablespoons low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 1 1/2 pound boneless, skinless chicken breasts, cut into 2-inch cubes
  • 2 bell peppers (1 red, 1 green) cut into 1/2-inch strips

What to Do

  1. In a small bowl, whisk reserved pineapple juice, honey, soy sauce, garlic, and ginger. Whisk in cornstarch until combined.
  2. In a 4-quart or larger slow cooker, place chicken and pineapple chunks. Pour pineapple juice mixture over chicken and cover. Cook on LOW 4 to 5 hours, or until chicken is no longer pink in center. Add bell peppers to slow cooker during the last 30 minutes of cooking time.

Notes

We like to serve this chicken over brown rice.
