When you're serving dinner to someone as important as a Captain, you know you've got to pull out all the stops, which is why we came up with this recipe for Captain's Chicken. Now, you don't really have to serve it to a Captain, but we think this chicken dinner recipe is perfect for impressing company, too!

What You'll Need

  • 1 red bell pepper, cut into 1/2-inch strips
  • 1 yellow bell pepper, cut into 1/2-inch strips
  • 1 onion, cut into thin wedges
  • 1/4 cup golden raisins
  • 3 cloves garlic, minced
  • 3 pounds boneless, skinless chicken drumsticks and thighs
  • 1 (14-1/2-ounce) can no-salt-added diced tomatoes, undrained
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt (optional)
  • 2 tablespoons all-purpose flour

What to Do

  1. In a 5-quart slow cooker, place peppers, onion, raisins, garlic, and chicken.
  2. In a medium bowl, combine tomatoes with liquid, curry powder, cumin, salt, if desired, and flour. Pour mixture over chicken.
  3. Cover and cook on HIGH 2-1/2 to 3 hours or on LOW 5 to 6 hours, or until chicken is tender.

Notes

Complete the meal by serving our Captain's Chicken over your favorite whole grain rice!

I made this yesterday. It smelled delicious while it was cooking and it was pretty. It was, however, tasteless. I will not make it again.

The first time I made this, I followed the directions to the letter. AWESOME After that I bought leg quarters because they were cheaper. I removed the skin, separated the thigh and drumstick and left the bone in. It was still excellent, plus (it was a little messy - use napkins) I was able to eat the chicken the way you are suppose to eat chicken - with my fingers.

If you're not used to cooking with dark meat, give this a try. Boneless skinless chicken thighs will make it easier for you and dark meat is more flavorful and tender, especially if you want kids to eat it. Little kids can have a hard time chewing chicken breast meat. Also if your a beginner at curry, you might want to try Penzey's light curry and no cumin. Penzeys like Curry is a gateway to Indian food. LOL
