Spaghetti Squash Surprise

The first time you taste spaghetti squash you might be surprised that it actually does taste like spaghetti! Our Spaghetti Squash Surprise is a simple recipe that acts as a healthier substitute for pasta.
What You'll Need
- 1 (3-pound) spaghetti squash
- 1/2 cup light marinara sauce
- 1 teaspoon garlic powder
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon sliced fresh basil
What to Do
1. Fill a soup pot with one inch of water and place whole squash in water. Bring to a boil over high heat, cover, and cook 20 to 30 minutes, or until tender when pierced with a knife. Remove squash to a cutting board and allow to cool slightly.
2. Cut squash in half lengthwise then use a spoon to remove and discard seeds. Scrape inside of squash with a fork, shredding into noodle-like strands.
3. Place shredded squash in a large skillet and heat over high heat 2 to 4 minutes to eliminate excess water. Add remaining ingredients except basil and cook over medium heat 5 to 7 minutes, or until heated through. Stir in basil and serve.

I made this many years ago. I will make it for my family and see if they can tell the difference. I would have to not tell my son what it is until after he eats it. He is not a fan of squash. This is definitely a lot better for you than the pasta.

I love it. My husband isn't too crazy about it, but I LOVE low carb food that don't need a lot of insulin for. I'm not a pasta lover like the husband is though.
