When looking for flavorful dishes that'll fit into diabetic meal plan, you can't go wrong with this Zippy Mango Salsa. Even though fruit contains carbohydrates, which can raise blood glucose levels, it's still important to keep it in your meal plan. Remember, it's mainly about portion control and balance.

What You'll Need

  • 2 large very ripe mangoes, diced
  • 1/2 medium green bell pepper, diced
  • 1/2 medium red bell pepper, diced
  • 1/2 small sweet onion, diced
  • 2 tablespoons finely chopped fresh parsley
  • 1/4 teaspoon hot pepper sauce*
  • 1/4 teaspoon ground cumin*

What to Do

  1. In a medium bowl, combine all the ingredients; mix well.

  2. Cover, and chill for at least one hour before serving.

Notes

*To make this a gluten-free recipe, avoid hot pepper sauce with malt flavoring added, and use seasoning with no added starch from a gluten-containing source.
