Our Tomato Eyeball Bites are so delicious and easy to eat you'll be hard-pressed to stop popping them into your mouth. Veggies have never been so fun - or festive - to eat!

What You'll Need

  • 20 cherry tomatoes, halved, with seeds and flesh removed
  • 4 ounces reduced-fat cream cheese
  • 3 tablespoons reduced-fat ranch salad dressing
  • 1/4 teaspoon garlic powder
  • 3 tablespoons reduced-fat finely shredded Cheddar cheese
  • 1 scallion, sliced into thin rings
  • 20 bacon bits

What to Do

  1. Place tomato halves on a serving platter. In a medium bowl combine cream cheese, ranch dressing, garlic powder and cheese.
  2. Spoon about 1 teaspoon cheese mixture into each tomato half. Decorate each with a scallion ring in center and place a bacon bit in center of each scallion ring (see photo).
  3. Cover and refrigerate until ready to serve.

Notes

To remove the seeds and the flesh of the cherry tomatoes, you may want to try a melon baller.
