This diabetic-friendly chicken dinner recipe is so easy, you'll find yourself coming back to it over and over again. Plus, our Slow Cooker Pulled Chicken is flavorful and easy to customize! You can serve it on its own, over a little brown rice, or with some low-carb tortillas.

What You'll Need

  • 1 (16-ounce) container, refrigerated fresh salsa
  • 1 (15-ounce) can low-sodium black beans, rinsed and drained
  • 1 pound boneless, skinless chicken thighs
  • 1/3 cup reduced-fat grated Cheddar cheese
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

What to Do

  1. In a 4-quart or larger slow cooker, place salsa, black beans, and chicken.
  2. Cover and cook on high 3-1/2 hours, or until fork-tender.
  3. Remove chicken to a cutting board and shred with two forks. Return chicken to slow cooker. Add cheese, cumin, chili powder, salt, and pepper; mix well. Cook 15 additional minutes, or until cheese is melted. Serve immediately.

Notes

To make your Slow Cooker Pulled Chicken a little fancier, just garnish with cilantro and avocado slices. (Okay, this'll make it tastier, too!)
