Sun-Dried Tomato Mediterranean Chicken

Our Sun-Dried Tomato Mediterranean Chicken is packed with the sultry flavors of sun-dried tomatoes and sprinkled with grated Parmesan cheese for a dinnertime experience you'll want to recreate over and over again!
What You'll Need
- 4 (4-ounce) boneless, skinless chicken breast halves, rinsed and patted dry
cup thinly sliced sun-dried tomatoes in oil
- 1 tablespoon sun-dried tomato oil
cup chopped ripe olives
cup grated Parmesan cheese
What to Do
Preheat oven to 450 degrees F. Cut 4 (12-inch) squares of foil. Fold each square in half diagonally to crease, then open up foil and lay flat.
Rub chicken breast halves with oil from sun-dried tomatoes. Spoon 1 tablespoon tomatoes, 1 tablespoon olives, and 1 tablespoon cheese over each chicken breast half. Loosely fold foil over chicken and seal edges.
Bake 15 minutes, then check chicken for doneness. (Be careful when opening steaming packets.) If chicken is still pink, reseal and bake about 5 additional minutes, or until chicken is no longer pink.
