Few things go better with your morning coffee than a sweet crunchy biscotti. But there's no need to buy them when you can make your own much healthier version! Give our Mini Chip Biscotti a try and you'll never spend another dime at those overpriced cafes again, especially when you compare our nutrition stats to theirs!

What You'll Need

  • 2 large eggs
  • 1 egg white
  • 1/2 cup Splenda baking blend
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup almonds, finely chopped
  • 1/2 cup mini chocolate chips

What to Do

  1. Preheat oven to 375 degrees F. Coat a baking sheet with cooking spray.
  2. In a large mixing bowl, combine all ingredients. Form dough into flat-shaped loaf and place on prepared baking sheet.
  3. Bake about 20 minutes, or until firm in center. Allow loaf to cool, then slice into thin slices. Lay slices flat on baking sheet and bake another 15 minutes, or until golden brown.
  4. Cool and store in airtight container up to 1 week.
