Whether for company or for a light lunch, our Grapevine Curried Chicken Salad is a simple yet delicious light option. The curry powder adds lots of flavor, which makes this recipe a hit-maker.

What You'll Need

  • 1/4 teaspoon curry powder
  • 2 tablespoons reduced-fat mayonnaise, divided
  • 2 cups diced cooked, boneless, skinless chicken breasts
  • 1 cup seedless red or green grapes, halved

What to Do

  1. In a medium bowl, combine curry powder and 1 tablespoon mayonnaise.

  2. Add chicken and grapes; stir gently to coat. If needed to moisten ingredients, add remaining mayonnaise.
