Holiday Berry Compote

When fresh cranberries are in season, they are just begging to be transformed into this Holiday Berry Compote, which makes use of fresh blueberries, and rhubarb too! This delectable trio makes a sauce worthy of the Tom the Turkey's big day and can be included on your diabetic Thanksgiving menu!
What You'll Need
- 2 cups fresh cranberries
- 1 cup blueberries
- 1 cup frozen rhubarb
- 3/4 cup fresh orange juice
- 1/2 cup Splenda
- 1 cinnamon stick (for garnish)
What to Do

In a saucepan, combine all ingredients. Cook over medium-high heat about 20-25 mintues until all berries pop open.
- Let cool then serve, or let cool then cover and chill until ready to serve.
