It's A Fiesta Salad

Want to add some tasty excitement to your salad routine? Well the popular Mexican-style salad that's chock full of black beans, corn and tomatoes is a healthy salad and we have just the right combo of ingredients in our It's A Fiesta Salad to make sure it stays that way!

What You'll Need

  • 1/2 cup canned black beans, drained, rinsed
  • 1 cup frozen corn kernels, thawed
  • 1/2 cup diced tomatoes, drained
  • 6 scallions, sliced
  • 2 tablespoons lime juice
  • Fresh chopped cilantro for garnish

What to Do

  1. In a salad bowl, combine all ingredients except cilantro; refrigerate at least 1 hour before serving. Garnish with cilantro and serve.
