Crustless Pineapple Pie

One bite into our Crustless Pineapple Pie and you'll be ready to put on a hula skirt! This moist and easy pie recipe features an island fruit-favorite: pineapple. It's like hosting a luau for your taste buds!
What You'll Need
- 1 1/2 cup fat-free milk
- 1/2 cup sugar
- 1/2 cup reduced-calorie pancake mix
- 1/4 cup light margarine, melted
- 2 eggs
- 1 1/2 teaspoon vanilla extract
- 2 cans (8-ounce each) crushed pineapple in juice, drained and squeezed dry
- fat-free whipped topping, thawed (optional)
What to Do
- Preheat oven to 350 degrees F. Coat a 9-inch deep dish pie plate with cooking spray.
- In a blender, combine milk, sugar, pancake mix, margarine, eggs, and vanilla. Cover and process until smooth. Evenly spoon pineapple into pie plate. Pour batter over pineapple.
- Bake 40 to 45 minutes, or until a toothpick inserted in center comes out clean. Let cool, then garnish with whipped topping if desired.

I didn't know there could be a "healthy" pie, but this looks amazing. I love anything pineapple, and this is an easy pie with simple ingredients. I will make this for the weekend, then start looking for more healthy dessert recipes.

This may well be the best healthy pie recipe I have ever seen. It even apears, from reading the recipe, that is will be very tasty. It is hard to find good recipes that are sweet and good. I wonder if you could omit the sugar? I would think the pineapple just might carry the sweetness?

Hi there! The Test Kitchen says that the sugar in this recipe is used to stabilize the the pie. If you would like to make this recipe sugar free, you can use a sugar substitute in place of the sugar. :) Enjoy!

I made this pie last night...Just fantastic. I did switch the sugar out and used Splenda. Thank you for recipe....now is test of my willpower to not eat it all at once.

The pie plate wasn't big enough. Don't know why. Will use a larger one next time. I also used Splenda and it worked perfectly. Would this be good just stirred all up together?

Hi there! When the Test Kitchen made this recipe, they used a 9-inch deep dish pie plate. We have not made this recipe by stirring all of the ingredients together, as the pancake mix creates the desired crust. :) Let us know if you have any other questions. Enjoy!

I had trouble with this baking...I must have had it in the hour over an hour before it finally took on some color. It still didn't seem like it fully set when I finally took it out. I also found it to be a tad too sweet. I would not make this one again. (

Well I did it. The pie actually turned out really good my husband and friend thought it was actually delicious . Sorry I could not take a pic of it since there is only a very small piece of it left. The pie was more like a pudding just kind of melted in your mouth, my husband eat most of it since he had just come from the dentist an could only eat soft food. Thank you so much for a wonderful desert will definitely make this one again but will make sure I do not mess up on the directions lol

I'm making this as we speak however I'm not sure if it will turn out I messed up I added the pineapple to the ingredients when I put it all into the blender . Also I used splender I will let you know how it turns out.

Recipe calls for 2 cans (8-ounce) crushed pineapple, drained, Are you saying 2 - 8 oz cans for a total of 16 oz of pineapple? Or are you using 2 - 4 oz cans for a total of 8 ounces? Could you please advise... CJ Berg
